I have a rather large stainless steel gas grill with six burners also.
BUT, after igniting the burners, it does take a little time for the grill to heat up to the needed temperature where things grill best at. For burgers, it is about 400 - 425 degrees on my grill. It takes about five minutes per side.
Sears in the juices and cooks the meat through and through.
Lots of folks do like charcoal so I kinda think it is a personal thing. I personally cannot tolerate the taste of charcoal on my meat. I will be up sick all night. So it just depends upon what works best for the individual. I do not believe there is one that can be described as BETTER than the other.
It took me a long time to figure out I needed my temperature much higher than what I was trying to grill at before. Once I started cooking at 400 plus degrees the food tastes better and it stays moist inside...
