I cooked it long enough to kill all bacteria and stuff, and turned it down to 150, like i read, So much for internet cooks LOL

The point is to dry the meat, not so much to cook it. If you cook anything for that long, it overcooks.

My dehydrator (the cheap kind) circulates air at about 160℉. It could also do a lower temperature for longer. Lower temperatures are easier on the dehydrator racks which eventually crack... I think it typically takes 12 hours to make jerky, but it could be more or less depending on how thick the slices are. Marinating also takes 12 hours! (Try World Harbor's Caribbean Jerk sauce. Yum.)

One of the projects on my list (low on the list) is to build a smoke house. There too, the trick is to keep the temperature down...
