My experience with long hikes comes from the 19 mile round-trip hike from Yosemite Valley to the top of Half Dome. I can tell you that there isn't usually a lot of talking going on except at specific vista points. Unless you're walking with friends, nearly all of the people you'll encounter on these hikes are headed the opposite direction. Therefore you'll only see them briefly and a quick nod or "hello" is about all you'll manage.
Even when I'm hiking in a group, I don't tend to talk. My mouth is usually dry, I'm out of breath (assuming that it's a hard hike) and I'm focusing on taking that next step. Do joggers do a lot of chatting? I don't think so. Same for hikers. You may be different.
