Chili is now assembled and the First of four dumps is in the pot.
The color will improve dramatically as will the flavor :-)

So the 35+ year and still going strong poker gang will visit my humble abode tomorrow night. I have participated every other week and have rarely missed the gathering for at least 25 years.

Back in the day we would have a snack break around 10pm (we play from 8-11:30 or 12) that consisted of maybe some chips - nuts - small snack stuff at best. When my abode dropped in to the gathering rotation I stepped up the menu and I am happy to say that everyone else has followed suit. My first meal as a host was real lamb souvlaki with authentic Greek Tzatziki Sauce.

Fast forward a decade plus and tomorrow night I will be serving my award winning (State Champion) "All Killer - NO Filler" Texas Style Chili. (EDIT: I just read the other bored - no varmints in MY chili LOL!) It has been quite some time since I made a good pot of red. I have 8+ pounds of chuck tender - a pound +/- of Moose (in honor of a dear friend from Anchorage who sadly passed earlier this year) and a pound of a secret ingredient. Then all kinds of homegrown chili peppers and store bought chili powders, (I buy ALL powder from http://penderys.com) onion, garlic, beef stock and I do float a Serrano pepper!

On the up side it cleaned out a lot of room in my stand up basement freezer so that is a plus. On the 'down side' I need to win $100+ to recoup my expenses yet many folks in my neighborhood will be happy to see me LOL!!! Okiedokie - have a good day - time to trim and grind some meat (I have a special chili grind plate I paid someone to make decades ago) and get busy!! The house is going to smell so good later today :-)
