That would have been US60, not an interstate. Arizona has I10 and I40 running east/west.

I know the original US highway system (laid out in the ‘20s) starts in the east and increases going west. So I95 roughly follows US1. (I95 actually starts at US1 in Miami.)

I don’t know much about the east/west highways, but I wouldn’t be surprised if there was a similar pattern.

Conceptually, the two maps are cool. But they're far from accurate. Whoever drew them took considerable artistic license.

Look at highway 50 on the maps below. 50 is drawn to be the southernmost of the three highways that leave San Francisco. The map shows it running southeast from San Francisco, through Yosemite and well toward Vegas. In reality, 50 heads slightly northeast, through Sacramento and Tahoe. It would be the middle of the three San Francisco highways... what they're calling 60.

But then there's 60. I lived near there for 30 years and I'm completely unfamiliar with it! Maybe I drove part of 60 on my trip last year; I don't know. In any case, 60 actually ends in southwest Arizona. It doesn't go to California at all.

So, like I said, it's conceptual. I wouldn't use it to draw any conclusions as to which highway is longest - though 80, which I've seen in Pennsylvania, would get my vote.
