I think what they are saying is that, for example, Einstein had a "hunch" gravity could be described not as a force but as a curvature in spacetime. He didn't even have anywhere near enough math background to try to come up with the equations, so he had to lean on a close friend to TEACH HIM MATH. Once he understood the advanced math well enough he then spent years trying to come up with equations. he released the equations and THEN had to wait YEARS until someone was able to test the theory by observing a total eclipse of the sun and measuring displacement of a light beam going close enough to the sun to potentially be bent.

And Einstein turned out to be RIGHT (which still took years for some younger physicists to begin to appreciate. Afterwards he was asked what he would have done if the experiment had not given the ABSURD answer he predicted and he said "I would have felt sorry for God" because the math was so beautiful.

At least I think that is what they are talking about: NP problem solutions which CANNOT be "explored" methodically toward by algorithm but only jumped to by hunch (or insane luck).

That is the kind of stuff you can't jump to by algorithm...but only by following a "hunch" and somehow going beyond computability in a creative burst. Some NP problems are strongly suspected to have solutions...but would take more time than the time left in the universe to prove by trying all combinations, no matter how fast your computer.

Nonetheless, the Penrose video was recorded earlier in 2022. Since then there has been a major advance in AI tech:

Supposedly, you can ask it to do things like come up with a business plan, or an intricate plot for a new SF novel, or lyrics for a song (and maybe music score as well?) and it will put out a more than credible result.

Some people are now declaring that English, as a college major, will now DIE because the AI is so good at writing given very rough instructions on what you want written.

I confess I haven't played with it yet, myself, because you need to give a phone number (probably to avoid bot attacks) in order to create an account.

I think it was, like, seven years ago I speculated that eventually a computer program would write a full piece of music which would become a best seller ... and only later be revealed to have been written by an AI program. That hasn't happened yet, as far as I know, but I suspect it will happen soon.
