I realize you are just trying to broaden my culinary tastes because it has been depraved of many of the wonderful southern delectable cuisines and have been very generous in your suggestions and offers.
As I have been up and helping miz micro for two hours already to get ready for the horde coming here, I almost need a short nap.
There is one excellent side dish I would point you to if ya do not know about it from the Pennsylvania Deutsche community in eastern and southern Pennsylvania.
It is called COPE'S dried corn.. Iffen ya follow the directions (soak in water overnight) then boil and add brown sugar to taste, it is wonderfully sweet and something that is a must on the table every year..
Ours has been soaking in water for two days now and today it gets boiled and brown sugar added to taste.
It is soft, very tasty, and ya will want more..
This is my culinary gift to you in case you may not be aware of this very old product that is very tasty..
I eat mine in a bowl so I can get the liquid as well.
