Hi clo! My wife buys the same roasted chicken and debones it to make chicken & sausage gumbo. She uses the bones to make the chicken stock for the gumbo and cubes up the chicken meat. This gumbo is delicious and feeds us for at least 3-4 days served over rice! PD

fizzy,

I'm frugal by nature & know how to stretch food.
On Friday's at Stop & Shop they sell roasted chickens for $5.00, you have your choice, natural, honey, bourbon.
Last week I bought the natural & took all the meat off the bones, then used the bones to make stock.
Made two hearty sandwiches for dinner with salad, good for two nights.
I also made chicken & rice with peas, using 2/3rds of the stock. Froze the balance of stock & can make egg drop soup with it.
And froze the leftover chicken & rice for another meal.

That's pretty good for $5.00! heehee clo
